This week's menu plan: (Assuming a new little baby doesn't come to interrupt it, which would be okay with me :)
Monday: Homemade falafel with tomato sauce, fresh mozzarella slices and grilled zucchini in pita bread. (This rather complicated recipe was brought on by a discussion with Joel's brother and his wife this evening. They were talking about all the good vegetarian recipes they've been trying lately, and I brought this one up. It was one of my favorites in a restaurant that Joel and I used to eat in when we were courting. Unfortunately, the restaurant no longer exists, so I'll have to try my own hand at it :) Probably we'll also have some chips and a blueberry smoothie with these.
Tuesday: Chicken-Salsa homemade pizza with a frozen vegetable and root beer for the grown ups :) Slight difference in how I make my pizza: I mix sour cream with the salsa and spread it on the crust first, then sprinkle the cheese and chicken, and we add chopped green peppers as well.
Wednesay: Chicken and pineapple skewers on the grill, brown rice with feta cheese and grilled veggie packets (lay out tin foil and oil it slightly with olive oil---add your favorite chopped veggies---we like zucchini, squash, red onions, and colored peppers. Add a little olive oil, lemon juice, garlic, basil, oregano and sea salt. Roll up the bundles and grill until tender)
Thursday: Hotdogs on the grill ( it's that grilling season again!), baked beans and a green salad. I'm also hoping to find all-beef or all-turkey nitrate free hot-dogs at a local health food store---we'll see :)
Friday: Tomato sandwiches, (Yep, as simple as it sounds----toasted bread, mayo, sliced tomato and a slice of cheese), hard-boiled eggs (maybe deviled eggs?) and fresh fruit
Saturday: Asparagus-hummus-chicken-swiss cheese-tomato wraps :) No recipe---just combine all those ingredients in a flour tortilla or whole wheat wrap, and heat on your electric griddle until all warm. (Cook the asparagus first, obviously :), and applesauce
Sunday: Premade Salisbury steak ('cuz every mama needs a break now and then), yams baked in the oven while we're at church and a frozen vegetable.
